GF Banana Bread

Sometimes gluten-free recipes have 700 ingredients that you've never heard of before. But I've come to realize you can substitute rice flour for wheat flour in most recipes and it'll turn out just fine. This is a simple banana bread without any add-ins or strange ingredients.

Ingredients #
- 2 cups non-glutinous rice flour
- 3/4 cup sugar (do NOT skimp on this. This is not healthy mommy blogger bread.)
- 1 1/2 tsp baking powder
- 2 eggs
- 1 1/2 Tbsp vegetable oil or butter
- 1/2 cup milk
- 2 overripe bananas
Instructions #
Preheat oven to 180 C/350 F. Mix all the wet ingredients in a bowl, making sure to mash the banana finely with a fork. Stir in the dry ingredients and combine well. Pour into your greased/lined baking pan and bake for ~30 mins. A knife/skewer will come out clean when it's cooked through. Let cool and serve.
